Crispy Bean Brekkie Platter w Creamy Basil Scramble

We serve ours with caramelised onion jam, avocado, seeds, cherry tomatoes & strawberries

 

INGREDIENTS:

  • 1 small potato, cubed  

  • 1 tbsp Extra Virgin Olive Oil  

  • 1 tbsp Dukkah   

  • 1/2 cup chopped green beans  

  • 1/2 cup Crunchy Combo   

Creamy Basil Scramble: 

  • Oil for pan  

  • 1 block tofu, crumbled   

  • 1 small handful fresh basil, chopped  
     

Scramble Sauce:  

  • 1 tbsp Mayo  

  • 2 tsp nut butter  

  • pinch of salt & water   

INSTRUCTIONS​:

  1. Cover potatoes, green beans and crunchy combo with oil and dukkah 

  2. Bake in the oven until the potato is crispy   

  3. Heat oil in a pan and add crumbled tofu. Cook until tofu is golden. 

  4. Mix scramble sauce ingredients together and cover the tofu  

  5. Arrange ingredients on the serving board and serve with your favourite breakfast items
