Crunchy Combo Berry, Coconut Yoghurt Muffins

These Crunchy Combo Berry & Coconut Muffins are perfect for school lunch boxes or as a healthy everyday snack.

 

INGREDIENTS:

  • 2 cups self-raising flour 

  • Pinch salt 

  • 2/3 cup coconut sugar 

  • ½ cup shredded coconut 

  • Zest 1 orange 

  • ¾ packet crunchy combo 

  • ½ cup coconut oil, melted 

  • 1 egg 

  • ¾ cup coconut yoghurt 

  • 1 cup fresh or frozen mixed berries 

INSTRUCTIONS​:

  1. Preheat an oven to 180C. Line a 12-hole muffin tray with baking paper or muffin cases.  

  2. Sift the self-raising flour into a bowl, add the salt, coconut sugar, orange zest and shredded coconut and mix to combine.  

  3. Place the crunchy combo into a blender and pulse to form a rough breadcrumb texture then add this to the flour. 

  4. Add the wet ingredients and berries and mix this to form a batter. 

  5. Spoon this into the lined muffin tins and bake for 25-30 minutes, until cooked.
