Crunchy Combo Berry, Coconut Yoghurt Muffins
These Crunchy Combo Berry & Coconut Muffins are perfect for school lunch boxes or as a healthy everyday snack.
INGREDIENTS:
2 cups self-raising flour
Pinch salt
2/3 cup coconut sugar
½ cup shredded coconut
Zest 1 orange
¾ packet crunchy combo
½ cup coconut oil, melted
1 egg
¾ cup coconut yoghurt
1 cup fresh or frozen mixed berries
INSTRUCTIONS:
Preheat an oven to 180C. Line a 12-hole muffin tray with baking paper or muffin cases.
Sift the self-raising flour into a bowl, add the salt, coconut sugar, orange zest and shredded coconut and mix to combine.
Place the crunchy combo into a blender and pulse to form a rough breadcrumb texture then add this to the flour.
Add the wet ingredients and berries and mix this to form a batter.
Spoon this into the lined muffin tins and bake for 25-30 minutes, until cooked.
