Crunchy Combo Fried Rice

This Crunchy Combo fried rice is a perfect dish on its own or as a side for that Aussie summer BBQ.

 

INGREDIENTS

  • 2 cups cooked brown rice

  • 2 tbsps sesame oil

  • 2 spring onions, finely sliced

  • 1 clove garlic, minced

  • 1 carrot, peeled and diced

  • 1/2 cup sweet corn, fresh or frozen

  • 1/2 cup frozen peas

  • 1/2 cup Crunchy Combo

  • 2 tsp reduced salt soy sauce

  • 2 eggs lightly beaten

INSTRUCTIONS​

  1. Heat oil in a large frying pan over medium heat

  2. Add spring onion, garlic, carrot, corn, peas and Crunchy Combo and cook for 3-4 minutes or until carrot has softened

  3. Add rice and cook for a further minute or until heated through

  4. Stir through soy sauce and transfer to a serving plate

  5. Pour egg into frying pan and cook for 2 minutes or until almost cooked through

  6. Fold in half to form an omelette, remove to a cutting board and roughly chop

  7. Stir egg through rice and serve
