Hoi Sin Chicken, Crunchy Combo & Snow Pea Stir Fry
This is the perfect meal for every night of the week.
On the table in under 30 minutes. Simply increase quantities as needed. Replace the chicken with pork mince or for a meat-free version, tofu, or more veggies. Also, try cooked rice noodles tossed through at the end instead of rice for another version.
INGREDIENTS:
400g chicken stir fry strips
1 tsp sesame oil
2 tsp soy sauce
Pinch salt
Sauce:
2 tbsp hoi sin sauce
2 tbsp oyster sauce
2 tbsp dark soy sauce
2 tbsp rice vinegar
1 clove garlic
1 tbsp ginger, grated or sliced
2 tbsp sesame oil
1 cup snow peas, trimmed
2 cups Asian greens, chopped
½ cup shallots, white part cut into batons, green part, sliced
1 packet Crunchy Combo
Steamed rice, to serve
Coriander to serve, optional
INSTRUCTIONS:
Marinate the chicken with the sesame oil, soy and salt. Set aside for 10 minutes.
Mix the sauce ingredients and set aside.
Preheat a wok over a high heat and add the sesame oil and chicken and cook until coloured. Do this in batches if needed.
Add the prepared veggies and white part of shallot to the pan and continue to stir fry for 1 minutes then add the crunchy combo and cook for 1 minute more.
Add the mixed sauce, sliced green shallot and toss through over the high heat then serve with steamed rice.
And coriander if desired.
