Apricot & Crunchy Combo Bliss Balls

Great for school lunchboxes, these nutritious snacks are full of protein and fibre.

INGREDIENTS:

  • 1/2 cup Aussie Sprouts Crunchy Combo

  • 1 cup dried apricots

  • 1/2 cup dates

  • 1 cup rolled oats

  • 1/3 cup desiccated coconut

  • 1/4 cup sunflower seeds

  • 2 tablespoons chia seeds

  • 1 teaspoon cinnamon

  • 3 tablespoons water

  • 1/2 cup desiccated coconut, extra

INSTRUCTIONS​:

  1. Place Crunchy Combo in a small saucepan and cover with water. Bring to the boil and simmer for 10 minutes or until softened. Drain.  

  2. Place all ingredients except extra coconut in a food processor and process until mixture comes together in a ball (add a little more water if mixture is too dry).

  3. Spread extra coconut over a large plate. Roll mixture into balls, then roll in coconut. Refrigerate for 30 minutes before serving.
