Chickpea Casserole

This one-pan, single-serve casserole only takes 15 minutes to make and super delicious!! It’s like a mini version of Shepard pie with a fluffy creamy sweet potato mash on a bed of fragrant saucy tomato-chickpea base.

 

INGREDIENTS:

Chickpea Mix:

  • 1/2 cup cooked chickpeas

  • 1/2 small onion, finely diced

  • 2 tsp Avocado oil

  • Handful of Pea shoots chopped

  • 1/2 cup Pasta sauce

  • 1 tbsp Italian seasoning

Maple Sweet Potato Mash:

  • 1/2 sweet potato mashed with 3 tbsp almond milk

  • 1 tsp maple syrup (optional)

  • Sprinkle with Cashew Parmesan 

INSTRUCTIONS​:

  1. Simply cook onion with oil until caramelised, then add in rest of the ingredients and cook till slightly softened.

  2. Top with a layer of mashed sweet potato & a sprinkle of cheese.

  3. Enjoy immediately or bake for 5 mins for a golden-brown crust

  4. Serve in my mini casserole
