Chickpea Casserole
This one-pan, single-serve casserole only takes 15 minutes to make and super delicious!! It’s like a mini version of Shepard pie with a fluffy creamy sweet potato mash on a bed of fragrant saucy tomato-chickpea base.
INGREDIENTS:
Chickpea Mix:
1/2 cup cooked chickpeas
1/2 small onion, finely diced
2 tsp Avocado oil
Handful of Pea shoots chopped
1/2 cup Pasta sauce
1 tbsp Italian seasoning
Maple Sweet Potato Mash:
1/2 sweet potato mashed with 3 tbsp almond milk
1 tsp maple syrup (optional)
Sprinkle with Cashew Parmesan
INSTRUCTIONS:
Simply cook onion with oil until caramelised, then add in rest of the ingredients and cook till slightly softened.
Top with a layer of mashed sweet potato & a sprinkle of cheese.
Enjoy immediately or bake for 5 mins for a golden-brown crust
