Crunchy Combo, Tofu & Vegetable Bowl
This is an excellent throw together lunch bowl. Quick easy, nutritious and delicious.
INGREDIENTS
1/4 block firm tofu
1/2 Lebanese cucumber
3 cherry tomatoes (halved)
1/2 cup Aussie Sprouts Crunchy Combo
1 tablespoon sauerkraut
1/2 cup chopped kale
1 tspn soy sauce
1 tblspn maple syrup
Salt/Pepper
INSTRUCTIONS
Cube 1/4 block of tofu and press lightly in paper towel to remove excess water
Place tofu in a bowl with soy sauce and maple syrup and leave to marinate for at least 15 minutes
Fry for 3-4 minutes each side in a non-stick pan
Finely slice Lebanese cucumber and place in a bowl with tofu
Add cherry tomatoes, crunchy combo, sauerkraut and chopped kale to the bowl
Season with salt and pepper and enjoy
