Crunchy Combo, Tofu & Vegetable Bowl

This is an excellent throw together lunch bowl. Quick easy, nutritious and delicious. 

 

INGREDIENTS

  • 1/4 block firm tofu

  • 1/2 Lebanese cucumber

  • 3 cherry tomatoes (halved)

  • 1/2 cup Aussie Sprouts Crunchy Combo

  • 1 tablespoon sauerkraut

  • 1/2 cup chopped kale

  • 1 tspn soy sauce

  • 1 tblspn maple syrup

  • Salt/Pepper

INSTRUCTIONS​

  1. Cube 1/4 block of tofu and press lightly in paper towel to remove excess water

  2. Place tofu in a bowl with soy sauce and maple syrup and leave to marinate for at least 15 minutes

  3. Fry for 3-4 minutes each side in a non-stick pan

  4. Finely slice Lebanese cucumber and place in a bowl with tofu

  5. Add cherry tomatoes, crunchy combo, sauerkraut and chopped kale to the bowl

  6. Season with salt and pepper and enjoy
