Asian Sprout Salad
INGREDIENTS:
1 cup Aussie Sprouts Crunchy Combo
100g Aussie Sprouts Bean Sprouts
50g Aussie Sprouts Pea Shoots (cut in half & stalks discarded)
100g sugar snap peas
½ bunch chives cut into 2cm lengths
1 stick celery halved, sliced into 4cm lengths
½ cucumber quartered lengthways
and sliced into 4cm lengths
Handful of coriander leaves
1 tbsp shredded mint
1 tbsp sesame seeds, to finish
DRESSING:
2 tbsp light soy sauce
2 tbsp rice wine vinegar
2 tbsp peanut oil
1 tbsp mirin
1 tbsp finely sliced red chilli
1 tbsp fresh lime juice (optional)
INSTRUCTIONS:
Combine all salad ingredients in a large bowl and toss gently.
Top with sesame seeds.
Combine all dressing ingredients and mix well.
Lightly drizzle dressing over salad and serve.
