Aussie Sprouts Middle Eastern Cauliflower Tacos

Quick and easy Middle Eastern inspired Cauliflower Tacos, dripping in creamy tahini-chipotle sauce, paired with Aussie Sprouts superfood Pea Shoots for extra pizzaz. Summer on a plate.

 

INGREDIENTS:

  • 1 Large Cauliflower head cut into Florets

  • Salt & pepper

  • Oil for deep frying

Chipotle Tahini Sauce:

  • 2 tablespoons tahini

  • 2 tablespoons lemon juice

  • 2 tablespoons water

  • 1 tablespoon yoghurt

  • 1/2 teaspoon honey

  • 1/4 teaspoon ground chipotle (smoked jalapeño)

  • 1/4 teaspoon ground cayenne

  • 1/2 teaspoon salt

  • Pinch of pepper

Tacos:

  • 8-10 small flour tortillas

  • 4-5 radishes, thinly sliced

  • 1-2 avocados, thinly sliced

  • Small purple cabbage, shredded

  • Aussie Sprouts pea shoots

INSTRUCTIONS​:

  1. Pat dry the cauliflower florets and season with salt and pepper, deep fry until golden and crispy. Transfer to paper towel and set aside. Alternatively, you can preheat the oven to 200c, line a baking tray with parchment paper, season with olive oil, salt and pepper, and bake for 20-25 minutes or until golden and crispy.

  2. In a bowl, whisk the tahini, lemon juice, water, yoghurt and honey until thick and creamy. Add the chipotle, cayenne, salt and pepper. Taste and adjust seasonings if needed. Set aside.

  3. Meanwhile, wash and slice the radishes, avocado and purple cabbage, and set aside for assembly.

  4. Use tongs to char the tortillas by placing them over an open gas flame for a few seconds per side or until the edges are slightly blackened and warm.

  5. To serve -top each charred tortilla with the cabbage, cauliflower, radishes, avocado slices, and Tahini sauce. Finally, add a handful of Aussie Sprouts Pea Shoots.
