Aussie Summer Rice Paper Rolls

These summer rice paper rolls are so refreshing and crunchy with the addition of crisp and fresh pea shoots! They are super nutrient-dense, full-packed of vitamins and minerals and they add a nice crunch to any dishes!! So perfect as a light lunch/ dinner, or bring to your next BBQ or party.

INGREDIENTS:

  • 150g firm tofu, cubed

  • Oil for pan

  • Sweet Chilli Sauce

  • Aussie Sprout Pea shoots

  • 1 Avocado, sliced

  • A sprinkle of sesame seeds

  • Rice Paper Sheets


Creamy PB sauce:

  • 1/2 cup coconut yogurt

  • 2 tbsp peanut butter

  • 2 tsp soy sauce

  • Optional 1 tsp sugar

INSTRUCTIONS​:

  1. Pan fry tofu cubes with oil in a pan until golden brown,

  2. Add sweet chilli sauce and simmer until sauce is thickened, turn off heat and set aside.

  3. Wet rice paper sheet with warm water then add in tofu, Pea Shoots, avocado, roll them up. 

  4. Mix sauce ingredients together till smooth and serve
