Healthy Spinach Pie

A healthier version of the classic spinach pie.

Serves: 8

 

INGREDIENTS:

  • 1/2 packet of Aussie Sprouts Alfalfa Sprouts

  • 500g fresh spinach, chopped 

  • 6 spring onions, finely chopped 

  • 2 garlic cloves, finely chopped 

  • 200g low fat ricotta 

  • 1 large egg, beaten 

  • 2 tbsp snipped chives 

  • 8 filo pastry cheers 

  • 100g low fat feta 

INSTRUCTIONS​: 

  1. Heat oven to 190 degrees C 

  2. Pack the spinach in a bowl and microwave until wilted. Drain excess water and put aside 

  3. Add chopped spring onion, oil, and garlic to a medium pan. Fry off for 3-4 minutes, then add spinach and fry for another 1 mint 

  4. Combine ricotta and eggs together, then mix in the with the spinach mix, chives, and Alfalfa Sprouts

  5. Lightly spray a large glass tray with oil. Lay a couple of layers of filo pastry on the base of the tray. Add the spinach ricotta mix and top with feta. add two more filo sheets on top, then oil, and repeat for the remaining sheets. Cross the sheet with a knife several time 

  6. Place the tray in the oven for 30 minutes, or until pastry is crispy and golden. Enjoy!
