Sweet Potato & Black Bean Burgers
These easy plant-based burgers are full of nutritious ingredients and are so tasty they’ll win over even the most dedicated meat eaters!

INGREDIENTS:
Patties:
2 large sweet potatoes (roughly 1kg total), peeled and roughly chopped
1 tablespoon extra virgin olive oil
1/3cup quinoa
1 x 400g tin black beans, rinsed and drained
1/2 red onion, finely chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2teaspoon chilli flakes (optional)
1/4 cup fresh coriander, finely chopped
2 tablespoons fresh mint, finely chopped
2 eggs
1/4tsp salt
To serve:
4 burger buns
1avocado, mashed
1 cup Aussie Sprouts Broccoli Sprouts or Alfalfa
2 tomatoes, sliced
4-8 lettuce leaves
1/4 cup reduced fat mayonnaise
INSTRUCTIONS:
Preheat oven to 200°C.
Place sweet potato on a large oven tray and drizzle with extra virgin olive oil. Roast for 20-25 minutes or until soft.
Meanwhile, place quinoa in a sieve and rinse well. Transfer to a small saucepan along with 2/3cup water. Cover and simmer over medium heat for 15minutes or until water is absorbed.
Once sweet potato is cooked, place in a large bowl with the black beans and mash using a potato masher or fork (don’t worry if there are still some whole beans present). Add all other patty ingredients and mix well.
Shape mixture into four patties and place on a well-oiled oven tray. Bake for 20 minutes or until golden brown.
To assemble burgers, cut bun in half, then top with avocado, sprouts, patty, tomato, lettuce leaves, and mayonnaise.
