The Ultimate Green Salad

This super healthy salad is full of different flavours and textures, all brought together with a delicious creamy dressing. Serve it at a BBQ or dinner party, it’s guaranteed to impress guests!

Serves: 4

 

INGREDIENTS:

  • 2 baby cos lettuces, quartered

  • 1/2 punnet Aussie Sprouts Pea Shoots

  • 1/2 punnet Aussie Sprouts Broccoli Sprouts or Alfalfa

  • 1/2 bulb fennel, shaved or very thinly sliced

  • 1 avocado, sliced

  • 1cup snow peas, sliced lengthwise

  • 1/4 cup toasted pistachio nuts, roughly chopped

Green Goddess Dressing:

  • 1 cup Greek yoghurt

  • 1 cup fresh herbs such as dill, chives, coriander and mint

  • 1 tablespoon capers

  • 1 tablespoon extra virgin olive oil

  • Grated rind and juice of 1/2 lemon

  • Salt and pepper

INSTRUCTIONS​:

  1. To make dressing, place yoghurt, herbs, capers, oil and lemon rind and juice in a blender or food processor and blend until smooth. Season to taste with salt and pepper.

  2. Spread cos lettuce over a large platter. Top with remaining salad ingredients and serve with dressing.
